JACKSBORO, TN (WLAF) – In the mood for “Something Sweet” or a delicious wrap, soup or salad? Check out Lacy and Jared Griffin’s and Courtney Cordes’s new storefront in Jacksboro. The three owners each run their business out of the location and offer up a variety of sweet treats as well as wraps, soups, salads and baked goods.

Currently Something Sweet has multiple Valentine’s Day specials including chocolate covered strawberries, cookie cakes, two person cheese cakes, cheese cake filled strawberries and bacon roses.

Cordes operates CC’s Cakes and Creations, while Griffin runs Lacy’s Cakes and her husband Jared runs Griffin’s Breads and Pastries. Collectively, their business is known as”Something Sweet.”  It is veteran owned and the business also gives discounts to first responders, current military members and veterans. Something Sweet has baked goods and lunch and dinner specials available each day. They also takes custom cake, bread and sweets orders, as well as offers small lunch and dinner platters for catering occasions as well. Everything is made and baked fresh daily. 

Something Sweet Bakery and Cafe is WLAF’s business of the week. The storefront actually houses three local businesses including CCs Cakes and Creations, Lacy’s Cakes and Griffin’s Breads and Pastries.

Both Lacy Griffin and Cordes had previously operated their businesses out of their homes. Something Sweet is located in what was Chuck and Shy’s Subs. For Lacy Griffin, it has been a return to her former storefront location her business occupied in 2018 and 2019. Her husband Jared Griffin bakes bread and cinnamon rolls at the location as well. The trio opened up their combined shop before Christmas and said they had been overwhelmed with the community’s support.

The business partners decided on the name “Something Sweet” because they wanted to have a name that was self explanatory and wasn’t favoring either business while also “getting the point across.” However, they are still three separate businesses as far as taking custom cake orders and sourdough bread and cinnamon roll orders. 

“After seeing how excited the community was and how supportive, we decided to start doing lunch specials in January and that has went over quite well” Lacy Griffin said.

“The community support has been wonderful! We’ve had to double and triple our supply orders it’s been great,” Cordes said. 

The businesses often sell out of cupcakes, baked goods and specials each day they are open.

“To me that’s amazing and rewarding because I’m usually here till midnight prepping and back at it again by 7 am baking so we have plenty to put out,” Lacy Griffin said. Her husband Jared who’s in the National Guard, said he had been enjoying the baking business. The sourdough bread recipe he uses is his mother-in-laws. Some of his other recipes are from his grandmother who he used to bake with as a kid. 

“It started with bread, then it was bread and cinnamon rolls and now I’ve added pies, so it just keeps growing,” Jared Griffin said. 

“We are still in awe of the blessing this little storefront business has been. Courtney Cordes, Jared Griffin and I can’t get over the love this community has shown us,” Lacy Griffin said.

Something Sweet is located at 3175 Appalachian Hwy Suite 4 in Jacksboro, across from the Jacksboro Middle school. The business is open Tuesday through Saturday from 11 am to 6 pm, except on Wednesdays and Saturdays when they close at 5 pm. For more information or to place an order call 423.912.9110.
